Fluffy Pancakes are my family´s favorite. We like to sweeten our moments spent together with Fluffy Cream Cheese Pancakes. They are so simple, made with all the simple ingredients that everyone has in the kitchen.
You will need 10 simple ingredients to get 12 pancakes, in 12 minutes. Fluffy Pancakes are not sweet and you can feel the taste of cream cheese. If you prefer sweet pancakes, use some syrup that you like. A piece of butter can also be added, as well as some fruit… and a perfect breakfast is ready.
What makes this Fluffy Pancakes special? Cream cheese gives them a special taste and the fact that egg whites are beaten separately makes them incredibly fluffy.
What do you need to prepare Fluffy Cream Cheese Pancakes?
- 1 1/4 cup All purpose flour
- 1 tbsp. Granulated sugar
- 1/2 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 8 Oz Cream cheese
- 2 large Eggs – separated
- 2/3 cup Milk
- 1 tsp Vanilla
- Oil for greasing
How to prepare Fluffy Cream Cheese Pancakes?
Combine flour, baking powder, baking soda and salt. In a separate dish, whisk egg whites until white and foamy. In a large dish, whisk cream cheese, sugar, egg yolks and vanilla. Add wet ingredients into dry ones and whisk to combine. Fold in egg whites. Heat large non stick skillet or griddle at a medium temperature. Grease with oil. Pour a 1/4 cup batter in the dish. Bake for about 2 minutes or until the bottom side becomes golden and bubbles appear. Turn over with spatula and bake for another minute, or until it becomes golden. Serve with maple syrup, honey, butter or fruit.
NOTES:
If you find the batter too thick, fold a couple tablespoons of extra milk into the batter at a time until reaching desired consistency.
I usually bake 4 pancakes at the same time. It is best to use the batter immediately. Don´t leave it for tomorrow.

I have not made them yet. It says to whisk in the cream cheese. It has to become really soft to do that correct? If one uses beaters to mix would it make the better too tough? It may be a crazy question but I just didn't know how you Incorporated the cream cheese in this recipe. I've been looking for a good pancake recipe. Pancakes are not all created the same so I'm looking forward to attempting this

Dang! These were the best pancakes I’ve ever eaten. We couldn’t really taste the cream cheese, but it made for a delicious and fluffy texture.
