What is necessary to prepare Cranberry Pistachio Fudge?
All you need is:
- 1 (14 ounces) can Sweetened condensed milk
- 14 ounces White chocolate, chopped
- 1 tablespoon Unsalted Butter
- 1/2 teaspoon Vanilla extract
- 1 cup Dried cranberries, chopped
- 3/4 cup Pistachios, chopped
How to prepare Cranberry Pistachio Fudge?
Pour sweetened condensed milk in a large dish and warm it, at medium heat. After that add chocolate and butter before the milk starts to boil, then stir until chocolate is completely melted. Remove from heat and fold in vanilla and pistachios and cranberries, too.
Pour the mixture into an 8 x 8 inch pan, which is lined with parchment paper and make it smooth. Finally, put it in the fridge for at least 2 hours. Before serving, it should be taken out of the fridge and left at a room temperature for few minutes. The fudge should be cut into 36 pieces.
The fudge should be kept refrigerated for no longer than a week.

How to store Cranberry Pistachio Fudge?
They can be stored in an airtight container in a cool place. If you keep them in the refrigerator, put a couple of paper kitchen towels in the box and they will absorb the extra moisture.
Use high quality white chocolate because it will give your fudge a perfect taste. If you want to make pistachio flavor more intense, toast them in the oven at 350F for 5-6 minutes.

I always recommend to follow the recipe. But if is necessary, it can be done in the microwave, but you have to work in shorter intervals of 5-10 seconds.
