Cranberry Pistachio Fudge

First of all, this is a recipe for homemade fudge, quick and easy, made of only 6 ingredients and in 15 minutes. It´s chocolate creamy and at the same time pistachio makes it crunchy, while dried cranberries provide sour - sweet taste.

Holidays are coming, there is only little time left until Thanksgiving. Christmas and New Year will be here in no time. Therefore, it´s time to start thinking about what to prepare. Thanksgiving or Christmas dinner is the time for the whole family to be together, there is a positive, festive atmosphere all around and of course, there is a sweet treat.

Everybody loves tasty desserts that are quick and easy to prepare and Cranberry Pistachio Fudge is one of those. You will love its taste, as much as its looks, because it looks perfect on the holiday plate and completes the holiday atmosphere.

What is necessary to prepare Cranberry Pistachio Fudge?

All you need is:

  • 1 (14 ounces) can Sweetened condensed milk
  • 14 ounces White chocolate, chopped
  • 1 tablespoon Unsalted Butter
  • ½ teaspoon Vanilla extract
  • 1 cup Dried cranberries, chopped
  • ¾ cup Pistachios, chopped

How to prepare Cranberry Pistachio Fudge?

Pour sweetened condensed milk in a large dish and warm it, at medium heat. After that add chocolate and butter before the milk starts to boil, then stir until chocolate is completely melted. Remove from heat and fold in vanilla and pistachios and cranberries, too.

Pour the mixture into an 8 x 8 inch pan, which is lined with parchment paper and make it smooth. Finally, put it in the fridge for at least 2 hours. Before serving, it should be taken out of the fridge and left at a room temperature for few minutes. The fudge should be cut into 36 pieces.

The fudge should be kept refrigerated for no longer than a week.

How to store Cranberry Pistachio Fudge?

They can be stored in an airtight container in a cool place. If you keep them in the refrigerator, put a couple of paper kitchen towels in the box and they will absorb the extra moisture.

1. Use good-quality white chocolate

White chocolate can be finicky. Choose bars or high-quality chips that melt smoothly - cheap brands tend to seize or turn grainy.

Make sure your cranberries and pistachios are dry

Any moisture can cause the fudge to separate. Pat cranberries dry and use roasted, unsalted pistachios.

Line the pan for easy removal

Use parchment paper or nonstick foil, leaving an overhang so you can lift the fudge out in one piece.

Don't rush the chilling

Chill at least 2-4 hours, or until fully set. For clean slices, use a sharp knife warmed under hot water.

Can I use sweetened condensed milk substitutes?

Not really. Sweetened condensed milk is what gives the fudge its creamy, firm texture. Evaporated milk won't work.

Do I have to use pistachios?

No! You can swap them for almonds, pecans, walnuts, or leave nuts out completely.

Can I use fresh cranberries instead of dried?

No - fresh cranberries contain too much moisture and will make the fudge wet, soft, or cause it to separate. Always use dried.

Why isn't my fudge setting?

It may need more time in the fridge, or the chocolate didn't fully melt/emulsify. Chill for at least 2-4 hours.

Can I freeze this fudge?

Yes! It freezes beautifully for up to 3 months. Wrap tightly and store in an airtight container.

  1. Oh, does this sound GOOD!! I'm going to make it to share with my church for December 14th potluck, and I think it'll be gone before the other desserts will even be touched 🙂

      1. You can try it with a freezer, Carolyn and cut into squares before serving. It should be taken out of the freezer 15-30 minutes before serving, because the cutting will be easier.

      I think some of you having problems with the recipe are using condensed or evaporated milk NOT SWEETENED CONDENSED MILK. Totally different products

      I always recommend to follow the recipe. But if is necessary, it can be done in the microwave, but you have to work in shorter intervals of 5-10 seconds.
