It inspires my cooking, as well, with my favorite spice – cinnamon. Apple and cinnamon make my perfect combination in the kitchen.

Easy Cinnamon Sugar Apple Cake is my sort of cake – easy to make, very tasty and everyone in my family loves it, so it is often on our menu at this time of year…. actually, whenever I want to feel that magical smell coming from the warm oven. It always makes me feel good.

What do you need to make this Cinnamon Sugar Apple Cake?

  • 1 1/2 cup cake flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cinnamon, divided
  • 1 1/3 cup granulated sugar, divided
  • 1/2 tablespoon cornstarch
  • 4 cups apples peeled and chopped into cubes (I used Gala)
  • 3 large eggs
  • 1 1/2 teaspoon vanilla extract
  • 3/4 cup unsalted butter, melted and cooled to room temperature

In order to make Easy Cinnamon Sugar Apple Cake you need to combine sugar and cinnamon and to set aside. Peel and dice the apples, add cinnamon and cornstarch and set aside.  Combine cake flour, baking powder and salt and set aside.

This cake may be eaten for breakfast, snack or as a dessert.  It is great with a cup of tea or coffee. All you need to make Easy Cinnamon Sugar Apple Cake is a few simple ingredients and a little free time. This cake is filled with juicy apples.  I used Gala apples and you can choose those that you prefer.

How to make Cinnamon Sugar Apple Cake?

  • Preheat the oven to 350 degrees. Line a 9 inch baking pan with wax paper.
  • In a small dish combine 1 teaspoon cinnamon and ⅓ cup sugar. Set aside.
  • Combine apples, 1/2 teaspoon cinnamon and cornstarch in a medium dish. Set aside.
  • Combine cake flour, baking powder and salt in a medium dish. Set aside.
  • In a large dish, beat eggs, the rest of sugar (1 cup) and vanilla extract, at high speed, until light and fluffy. Change the speed to Low. Add a ½ flour mixture. Beat until well combined.
  • Add ½ melted butter, then the rest of cake flour mixture and finally the other half of the melted butter. Fold in the apples. Spread evenly into the baking pan.
  • Sprinkle with sugar and cinnamon mixture. Bake for 50-55 min or until a toothpick placed in the center comes out clean or with a few crumbs on it.
  • Take out of the oven and leave in the baking pan for a few minutes to cool. Transfer to wire rack to cool completely.

Notes:

Keep at a room temperature, covered with plastic foliage.

You can use parchment instead of wax paper. Instead of cake flour you can use all purpose flour.

    You should not use wax paper in oven as it can catch fire, use parchment instead.

    The recipe calls for 11/2 tsp cinnamon. But the instructions call for 2. Could you confirm which it is?

    This looks like something my mother in law used to make so I’m dying to try it! You say cake flour ….am I dopey or is that just regular flour …as in …you know…..flour? Or is there really something called cake flour? I know there is bread flour.

    This is a very good recipe. I made half in an 8″x2″ round pan. I used a little less apple, about one heaping cup from a medium sized apple, and didn’t put the cinnamon sugar on top. The cake needs a little more salt. It’s very moist and is just as moist the next day.

    Just for ease of user, could you tell us volumes, like when you tell us 1-1/3 cup sugar divided. I have used 1/3 cup with cinnamon, but then later you tell us to mix sugar with eggs and vanilla. I have to go back and do the math. If you said 1 cup sugar it would be more user friendly. This happened for both the cinnamon and the sugar.

    Just for the ease of the baker.

    Mine is In the oven as I write, I am anxious to share with friends this evening.
