Which ingredients are necessary to make Snickerdoodle Apple Pie Bites?
- TO MAKE SNICKERDOODLE MINI CUPS:
- 3 cups All purpose flour
- 1 teaspoon Baking soda
- 2 teaspoons Cream of tartar
- 1 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 2 sticks (1 cup) Unsalted butter, room temperature
- 1 1/.2 cup Granulated sugar
- 1 Large Egg
- 1 1/2 teaspoon Vanilla extract
- Cooking spray
- TO MAKE THE APPLE PIE FILLING:
- 4 Apples
- 2/3 cup Granulated sugar
- 3 tablespoons Cornstarch
- 1 teaspoon Ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon Salt
- 2 cups Water
- 1 teaspoon Vanilla extract
- 2 tablespoons Lemon juice
How to make Snickerdoodle Apple Pie Bites?
To make snickerdoodle mini cups:
First, mix sugar and cinnamon in a smaller bowl. You will be using this mixture later for coating the dough balls.Next, combine dry ingredients: flour, baking soda, cream of tartar, salt and cinnamon. Meanwhile, mix butter and sugar until smooth,in a separate bowl, then add an egg and vanilla and beat some more until it’s all combined. Add dry ingredients and mix until well combined.
Next, scoop the dough with a small (1 tablespoon ) cookie scoop, then roll it in sugar and cinnamon mixture and place in a mini muffin tin sprayed with non-stick spray. There should be 36 balls altogether. Bake them at 350 F for 10-14 minutes or until the edges get golden brown. Take them out of the oven when they’re done and make an crater in the top of each cookie by pressing the back of a tablespoon into each mini cup. Let them cool for 5 minutes and then transfer them to a wire rack.
To make the apple pie filling:
Start by peeling and dicing apples (apple dice should be around a 1/4 inch). Next, put water, sugar, vanilla, lemon juice, cinnamon, nutmeg, salt and cornstarch in a pan, stir well and cook at medium heat until it thickens, for about 2 minutes, stirring constantly. Then, fold in apples, stir well and continue cooking for 10 more minutes stirring from time to time until the apples soften. Let it cool, then fill mini cups with apple pie filling. Serve with caramel sauce, vanilla ice cream or with some whipped topping on top.

Use cream of tartar only, not any kind of substitutes.
Butter should be soft, room temperature so that you can beat it well.
Eggs should also be room temperature.
Beat butter and sugar well, for about 4-5 minutes.
Double roll the balls into sugar and cinnamon mixture.
Do not over bake! If you want soft cups, you mustn’t over bake them.
Can they be prepared earlier? I recommend preparing the cups a day before. In that case store them in an airtight container. Apple pie filling can also be made a day before and kept refrigerated, although making it on the day of serving is a much better option. Filling the cups should also be done on the day of serving.
Can I use canned apple pie filling? Yes, if you prefer it or don’t have enough time for preparing a homemade one. I am always in favor of homemade apple pie filling!
What sort of apples should I choose for the apple pie filling? I used Granny Smith, but Golden Delicious and Gala would also do.
How to store the leftovers? Store them in an airtight container, keep refrigerated for 2-3 days. then take out of the fridge 20 min before serving.
Can I freeze Snickerdoodle Apple Pie Bites? Yes, you can freeze baked cups and fill them after defrosting.
A tip: If 36 bites is too much for you, make as many as you need and use the remaining dough to make cookies: scoop 1 spoon of dough, roll it into sugar and cinnamon mixture and freeze for up to 2 months. Defrost it before baking, take it out of the fridge 20 minutes earlier, then bake for 10 minutes at 350F or until the edges get golden brown.
