They are so simple and, yet so delicious.  However, what I really like about these cookies is that you can choose many types of fillings.  My favorite are those filled with jam, but the choice is yours:  chocolate, white chocolate, butter cream, Hershey’s kisses candies, maraschino cherries, lemon curd, Nutella, cheesecake…

If  you choose jam, the choice is, again, big… This time I’ve decided to prepare them with blueberry and apricot jam.  Anyway, these Jam Thumbprint Cookie Recipes are must have cookies on the Christmas plate or in the cookie box.

So, let’s start; to prepare these Jam Thumbprint Cookies, you will need a few simple ingredients, like:

  • 1 cup Unsalted Butter, softened
  • 2/3 cup Powdered sugar
  • 1 teaspoon Vanilla extract
  • pinch of salt
  • 2 cups All purpose flour
  • 2 Tablespoon Cornstarch
  • 1/2 cup fruit jam

How to prepare Jam Thumbprint Cookies? 

First, beat butter and powdered sugar until it’s light and fluffy. You should choose high speed and beat for about 2-3 min. Then add vanilla and beat some more until it is well combined.  Next, lower the speed and add flour, cornstarch and salt. Again, you should beat it until it´s just combined, do not overmix.   Cover the batter with plastic foliage and chill for 30 min and then it should be taken out of the fridge.

Begin making 1 inch balls that should be placed in the baking sheet that you have already prepared, by lining it with parchment paper. Then, press each ball in the center, with a finger or  1/2 tsp. measuring teaspoon, so to make a indentation.  It is really important to be careful while doing this, because the batter could crack, although it is pretty soft.  If it happens, anyway, you can even or close the crack with your fingers.

Next, you need to put the jam filling in the center and bake for about 20 minutes, at 325 F. After 20 min, take the cookies out of the oven and leave them to cool in the baking sheet for a few minutes, and then transfer them to a wire rack and sprinkle with powdered sugar.

Ingredients

  • 1 cup Unsalted Butter, softened

Preheat the oven to 325 F. Then, take two baking sheets and line them with parchment paper.

Notes

Try to make thumbprints slowly, because the batter can crack, although it is pretty soft, so it shouldn't be happening. However, if the batter cracks, you can close or even the crack with your fingers. 

You can make the filling easier, if you put jam in the piping bag and cut its top and use juicier kind of jam, instead of a jelly one.

Cookies can be stored at a room temperature for 4-5 days. You can, also keep baked cookies in the freezer for 3 months.
