This Apple Cinnamon Bread is soft, moist, and loaded with tender pieces of fresh apples, warm cinnamon, and sweet brown sugar, with cinnamon sugar layered throughout and a simple glaze drizzled over the top.
Preheat the oven to 350°F. Spray a 9×5-inch loaf pan with cooking spray and line it with parchment paper, leaving some overhang for easy removal.
Make the cinnamon sugar. In a small bowl, combine the light brown sugar and cinnamon. Stir until well combined and set aside. This cinnamon sugar will be sprinkled over the apples as you layer the bread.
Prepare the apples. Peel and dice the apples into ½-inch cubes. Place them in a bowl and toss with the light brown sugar and cinnamon until evenly coated. Set aside.
Make the batter. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the softened butter, granulated sugar, and light brown sugar until light and creamy. Add the eggs and vanilla and mix until well combined. Gradually add the dry ingredients and mix just until incorporated. Slowly add the milk and mix just until combined. Do not overmix.
Layer the bread. Spread half of the batter evenly into the prepared loaf pan. Sprinkle half of the apples over the batter, followed by half of the cinnamon sugar. Add the remaining batter and spread gently into an even layer. Top with the remaining apples and cinnamon sugar.
Bake. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Add the glaze. In a small bowl, whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the completely cooled bread before slicing and serving.
Notes
Don’t overmix: Mix the batter just until the ingredients are combined once the flour is added. Overmixing can result in a denser loaf.
Check the center: Because the bread contains apple pieces, make sure to test the center with a toothpick in a spot without an apple piece. It should come out clean or with a few moist crumbs.
Cool before glazing: Make sure the bread is completely cool before adding the glaze so it stays on top instead of melting into the bread.
For freezing: Freeze the bread without the glaze for the best results. Add the glaze after the bread has thawed completely.
