This old fashioned Blueberry Cobbler is the easiest recipe for the tastiest dessert from ingredients you already have on hand, it’s simply perfect. Sweet, juicy blueberries coated with crunchy buttery batter are best served warm with a scoop of vanilla ice cream.
Preheat oven to 350F. Cut the butter into cubes and place in a 9x13 inch baking pan. Put in the oven to melt the butter.
Prepare the blueberries
Meanwhile, mix blueberries, sugar, brown sugar and lemon zest in a medium sized bowl. Stir until blueberries are evenly coated with sugar. When the butter is melted, remove it from the oven.
Make the batter
In a separate bowl, combine flour, sugar, baking powder and salt. Make a well in the middle and add milk and vanilla, Whisk until the batter is smooth.
Assemble the cobbler
Add the blueberries over the melted butter and spread evenly. Pour the batter over the blueberries, making sure that it is evenly distributed in the center and around the edges. Finally, sprinkle some cinnamon on top.
Bake
Bake for 35-40 minutes until golden brown on top. If you use frozen blueberries, add another 10-15 minutes of baking time.
Remove from the oven when done and leave at room temperature for 15 minutes, then serve with a scoop of vanilla ice cream or whipped topping.
Notes
Use fresh, firm, ripe blueberries. Avoid using overripe fruit, so that your filling does not become runny. Taste the blueberries first. In case they are sour, add some more sugar to the filling.
Can frozen blueberries be used? Cobbler is best made with fresh blueberries. You can also use frozen ones, but keep in mind that they release more juice so your filling might be runny.
