These Cherry Rum Balls are quick and easy to make with just a few ingredients, perfect for Christmas, Valentine's Day, parties, and gatherings. If you love chocolate, rum, and cherries, these delightful bites will win you over.
Melt the chocolate. The best way is to use a double boiler. Fill a deeper pot with water and bring it to a boil over medium heat. Lower the heat to low and place a larger bowl (preferably glass) with the chocolate over the pot. Make sure the glass bowl does not touch the water in the pot. It should be at least a few inches above the water. Once the chocolate starts to melt, stir with a flexible spatula until fully melted and smooth. Remove from the heat.
Add the corn syrup and rum to the melted chocolate. Stir to combine.
In a separate bowl, combine the graham cracker crumbs, finely chopped pecans, and ¼ cup of powdered sugar. Pour the chocolate-rum mixture over the graham cracker mixture and stir until well combined.
Form 1-inch balls, then roll them in the remaining powdered sugar to coat them completely. Press the center of each ball with your thumb to create an indentation and place half of a maraschino cherry in the center.
