Line a baking sheet with parchment paper and set it aside.
Next, remove pits from your dates and put them along with cashews in a food processor with S-Blade and pulse until the mixture is homogeneous.
Then add cocoa, coconut oil and salt and pulse until it starts to thicken.
Scoop a spoonful of mixture and place on the baking sheet, lined with parchment paper, then roll them between hands to make a ball shape.
Leave the balls in the fridge for 10-15 minutes to become solid, then transfer them to an airtight container.
Notes
Make sure to remove the pits from the dates. Use room temperature dates, it will be easier to grind them.
PRO-TIP: Make sure not to process the ingredients for too long, the heat will melt the oil and the mixture will be too fatty. The fat will separate from the other ingredients and the mixture will become very thick and sticky. In that case you won’t be able to form balls.
You can store them in an airtight container, refrigerated for no longer than 10 days, or in the freezer up to 3 months.
Can other nuts be used? Yes, you can use walnuts, pecans, almonds, or a combine your favorite ones
