Cinnamon Roll French Toast Roll Ups - perfect breakfast or brunch that you will love and that’s so quick and easy to prepare. It’s made of soft bread rolled with a rolling pin, spread with cinnamon, butter and brown sugar filling, rolled, then dipped into eggs, milk and vanilla, cooked in a frying pan on butter and finally coated with cinnamon and sugar. You can serve them with maple syrup or whipped cream and enjoy every bite.
First, separate 2 tablespoon of butter and set it aside. Then mix the remaining butter with 1 tablespoon of cinnamon and light brown sugar, in a medium bowl, until they’re incorporated. Set it aside.
In a small bowl, mix granulated sugar with 1 teaspoon of cinnamon, then set it aside.
In a medium dish whisk eggs, milk and vanilla until they are finely mixed, then set it aside.
Next, remove the crust from every slice of bread, roll each slice with a rolling pin and spread a thin layer of butter cinnamon mixture. Roll them tight.
Then melt tablespoon of butter in a nonstick-frying pan, at medium heat, dip each bread roll in milk and egg mixture, coat well and place seam side down.
Next, put them in a warm pan and fry until golden brown on both sides, about 2 minutes per side. You can add butter in the pan, if necessary.
Finally, coat the rolls with sugar cinnamon mixture and serve with maple syrup.
Notes
Use soft bread, because it’s easier to flatten it.
Non - stick frying pan is the best option for rolls not to get stuck.
After cooking, remove the remaining butter with a paper towel then add new butter. Cooked this way your rolls will be golden brown.
The rolls should be coated in a cinnamon sugar mixture as soon as you take them out of the pan, because the mixture will be nicely stuck to them.
The rolls should be fried in series of 4, taking care that they don’t burn.
A tip: Don’t keep rolled bread in egg and milk mixture for too long, because they will absorb too much liquid and get wet inside. You only need to coat them with the mixture from each side.
