Instructions
To Make the Base:
Line a 9x9-inch baking pan with parchment paper and set aside.
In a medium bowl, combine graham cracker crumbs, melted butter or nut butter, and honey. Stir until the crumbs are evenly coated.
Transfer the mixture to the prepared pan, spreading it evenly across the bottom. Gently press it down using a firm object - like a measuring cup.
Tip: Don’t press too hard, or the base will become too dense. A light, firm press is enough.
Place it in the fridge while you prepare the filling.
To Make the Filling:
Place the cottage cheese, honey or maple syrup, and vanilla in a blender or food processor. Blend until smooth.Add the peanut butter and blend again until creamy.
Fold in the chocolate chips. Spread the filling evenly over the prepared crust and smooth the top.
Cover the pan with plastic wrap and freeze for at least 4 hours, or until set.
Notes
If you want a higher-protein version, add a scoop of whey protein or collagen.For a dairy-free version, use vegan cream cheese instead of cottage cheese.
How to Store
Store the bars in an airtight container in the freezer for up to 2 weeks.
Tip:
Cover them with plastic wrap before sealing the container to prevent ice crystals from forming.
