Hello everybody! It is healthy food on menu today - Cranberry Pecan Spinach Salad recipe rich with apples and cheese. A delightful blend of different flavors in one bowl.
Step 1 MAKE THE DRESSING: Squeeze two mandarin oranges and pour the juice into a medium dish. Add extra virgin olive oil, apple cider vinegar, honey, poppy seeds and chia seeds. Then add a pinch of salt, paprika and pepper. Mix well and set aside.
Step 2 MAKE THE SALAD: Slice both an apple and a pear. Put spinach and arugula, sliced apple and pear, pecans and cranberries.
Step 3 Put the dressing over the salad and mix well. Put crumbled feta cheese over it.
