Cranberry Pistachio White Chocolate Bark – is a quick and easy Christmas dessert, ready in 30 minutes! These festive barks with green pistachios, red cranberries and white chocolate are a perfect Christmas treat. This Cranberry Pistachio White Chocolate Bark is so easy to prepare and you’ll only need 3 simple ingredients + 15 minutes of your time and 15 more minutes to set in the freezer and that’s it!
First, line a baking sheet with parchment paper and set it aside.
Then, cut two tablespoons pistachios and set aside. Next, cut two tablespoons of cranberries, set aside and start melting white chocolate. The best way to melt it is over a double boiler.
Pour water in the pan, then put another dish with chopped white chocolate in it on top and heat at medium-low temperature, stirring occasionally, until the chocolate is melted.
Make sure that the dish with chocolate inside doesn’t touch the water and the steam does not come in contact with white chocolate. Stay close to your stove all the time and stir from time to time!
There is a quick way to melt the chocolate - by using 30-second intervals on 20% power in the microwave stirring after each. Repeat the same procedure until all the chocolate is melted. Using a double-boiler is a safer way to melt chocolate.
Finally, add whole pistachios and cranberries to melted chocolate and stir well. Spread the mixture evenly on the prepared baking sheet, lined with parchment paper and sprinkle with chopped pistachios and cranberries.
Put it in the fridge for 20 minutes, or until it sets and then cut into pieces and serve.

Use high quality white chocolate because it will give your barks a perfect taste.
Make sure that white chocolate doesn’t get brown while being melted, because it is highly sensitive to high temperatures. Use lower temperatures and melt it longer.
If you want to make pistachio flavor more intense, toast them in the oven at 350F for 5-6 minutes.
How to store Cranberry Pistachio White Chocolate Bark? They can be stored in an airtight container in a cool place. If you keep them in the refrigerator, put a couple of paper kitchen towels in the box and they will absorb the extra moisture.
