This Easy Banana Cake with cream cheese frosting is the best and fastest banana cake I have ever tried. Very tasty, made with few simple ingredients, quick and easy, this is the recipe I simply adore.
Preheat the oven to 350 F ( 176 C). Butter and flour a 9x9 inch baking pan or spray it with cooking spray. Set aside.
TO MAKE THE CAKE:
In a medium sized bowl, combine flour, baking powder, baking soda, cinnamon and salt. Set aside.
In a separate larger bowl, mash the bananas until they are almost smooth using a potato masher. Add eggs, sugar, oil and vanilla and beat on medium speed until smooth.
Add dry ingredients and mix on low speed until combined. Be careful not to overmix.
Pour the dough into the prepared pan and spread it out. Bake for about 27-32 minutes or until a toothpick inserted into the center of the cake comes out dry.
Leave to cool at room temperature. When the cake has cooled, make the frosting.
TO MAKE THE FROSTING:
Beat butter and cream cheese on medium speed until smooth. Add heavy whipping cream and vanilla and beat until combined.
Finally, add powdered sugar and beat on low speed until smooth. Spread the frosting evenly over the cooled cake.
Cool for 3 hours or overnight.
Decorate the cake with chopped pecans and freshly cut banana slices.
Notes
Use ingredients that are at room temperature: eggs, butter, bananas, oil and cream cheese.
For the best taste, use overripe bananas with lots of brown spots.
Measure the flour correctly. It is best to use a kitchen scale and measure in grams. If you are using a cup, take out the flour with a spoon and put it in the cup. Finally, level with a knife. If you grab the flour from the bowl with a cup, the flour will compact and you will get 25% more quantity.
