Easy Berry Dream Dessert – this quick and easy no bake dessert with buttery graham cracker crust, creamy filling made of cream cheese, butter, whipped cream, fresh blueberries and strawberries, topped with graham crackers crumbs is the right choice for the 4th of July, as well as for the entire spring and summer season.
TO MAKE THE CRUST: Start by spraying an 8x8 inch or 9x9 inch pan with a non non-stick spray and then set it aside.
In a medium sized bowl, combine graham cracker crumbs, granulated sugar and melted butter, then toss together until incorporated.
Press crumb mixture on the bottom of an 8x8 inch or 9x9 inch pan and leave in the fridge for 10 minutes to cool. Meanwhile, make the filling.
TOMAKE THE FILLING: Start by beating heavy whipping cream until stiff peaks form and set a side.
In a separate bowl, mix cream cheese and butter until creamy, then add powdered sugar gradually, mixing it at low speed until smooth. Finally add whipped cream, vanilla, fresh lemon juice and mix until combined.
Spread ⅓ filling over the graham cracker crust, then place ½ of fresh blueberries and strawberries. Repeat the same procedure and finish with the layer of cream cheese mixture.
Sprinkle some graham cracker crumbs, wrap and cool in the fridge for at least 4 hours.
Notes
Use room temperature cream cheese and butter – it will be easier to beat them. They should be taken out of the fridge for at least an hour before using. Heavy whipping cream should be as cold as possible in order to get stiff peaks. Add more lemon juice for extra citrus flavor. You can also add raspberries, blackberries or make a berry mix.
Pro tip – if you want to to cut this dessert so that the pieces have proper shape, leave it in the fridge overnight. It will be more solid and easier to cut.
Can whipped topping be used instead of heavy whipping cream? Yes, it can. One 8 ounces container will be enough.
How to store the leftovers? In the fridge, wrapped or in an airtight container, for no longer then 3 days. I don’t recommend freezing this dessert.
