Easy Cheesy Chicken Quesadillas – this Mexican dish is so easy to make and it’s a perfect meal that can be prepared in no time! It can be a quick go-to lunch or a weeknight dinner made from simple ingredients with perfect taste. Crunchy tortillas filled with juicy chicken with lots of melted cheddar cheese and mozzarella, as well as pepper, taco sauce and taco seasoning are so delicious.
Put oil in a large skillet and heat at medium-high heat.
Next, add shredded chicken and taco seasoning and cook for 5 minutes, stirring from time to time.
Then add pepper, onion, taco sauce, stir well and cook for about 5 more minutes, or until the chicken softens.
Finally add cilantro, stir, then remove from heat and transfer into another bowl.
Put some butter in the same skillet and heat at medium heat, then place a tortilla in it. On one half of the tortilla put some cheddar and mozzarella cheese, then put ⅙ of the chicken on top of it, then some more cheese.
Fold it and cook both sides until golden and crispy. When it’s done, take it out of the skillet and repeat the same procedure with the remaining tortillas.
Cut tortillas in half or thirds and serve with salsa, guacamole or sour cream.
Notes
How do I store leftovers? In an airtight container, refrigerated, up to 2-3 days.
Heat them in a non-stick pan over medium heat, 1-2 minutes on each side or until the cheese is melted and the tortilla is crispy.
