Instructions
In a large bowl, use an electric mixer on medium speed to whip the softened cream cheese until smooth.
Add the remaining ingredients: drained crushed pineapple, Nilla wafer crumbs, 1 ¼ cups fine unsweetened desiccated coconut, and pineapple Jello powder. Mix on low speed until the ingredients are well combined.
Leave the mixture in the fridge to chill for 1 hour. After the chilling time has passed, take it out of the fridge.
Roll 1 tablespoon of the mixture into balls, then roll them in the remaining coconut to coat them completely.

Let the cream cheese sit at room temperature for 1 hour to soften. This will make it easier to whip, and the texture will be smoother and without lumps.
Drain the excess liquid from the pineapple. If you don’t do this, the mixture will be watery and it will be hard to form the balls.
Use fine desiccated coconut. Make sure it’s unsweetened. If you can’t find it, you can use finely shredded coconut. Keep in mind that desiccated coconut is the best option for this recipe.
