Make sure to use instant vanilla pudding mix for this recipe. Cook & serve pudding will not work and will not give the correct texture.
If you plan to serve the salad later, always add the bananas just before serving for the best texture and appearance. Bananas will brown and become soft and mushy if they sit too long in the salad.
To slow down browning, you can dip banana slices in a small amount of lemon juice before adding them to the salad. This will help them stay fresh for a few hours if needed.
Keep in mind that using lemon juice may add a very subtle citrus flavor to the salad.
