3.4ouncesinstant vanilla pudding mix or cheesecake pudding mix
1cupHeavy whipping creamcold
2cupsmini Marshmallows
⅓cupChopped pecansWalnuts or almonds can be used as well
¾cupshredded sweetened Coconutor unsweetened if you prefer
⅓cupMaraschino cherriesdrained and chopped
Instructions
In a medium bowl, whip heavy whipping cream until stiff peaks form and set it aside.
In a separate larger bowl, stir together undrained pineapple and instant vanilla pudding mix to combine well.
Next, add whipped cream and stir to combine.
Finally mix in marshmallows, chopped pecans, maraschino cherries and shredded coconut.
Wrap and chill for a few hours or overnight.

Can this Pineapple Fluff be prepared ahead of time? Yes, it can. It is best to prepare it a few hours before serving. During cooling time, different flavors will combine and your Pineapple fluff salad will be even more delicious. It can be prepared a day before serving, I don’t recommend it earlier than that, because your salad can get watery.
How to store the leftovers? In the fridge, wrapped, no longer than 1-2 days.
Can I freeze Pineapple Fluff Salad? I don’t recommend it.
Can I use fresh pineapple? YES! Put fresh pineapple in a food processor, crush it, or make a puree.
Can I use unsweetened shredded coconut? Absolutely! I often prepare Pineapple Fluff Salad with unsweetened coconut. It’s perfectly refreshing and sweet enough, just the way I like it.
