These Prosciutto Asparagus Puff Pastry Bundles are one of the easiest and most delicious appetizers I have ever made and they will surely knock you off your feet. Prosciutto, fresh asparagus, mozzarella and parmesan are all tucked in a flaky, buttery puff pastry and have a very rich taste.
Preheat the oven to 425 degrees. Line 2 baking sheets with parchment paper and then set them aside.
In a medium sized dish, toss asparagus in olive oil, season with salt pepper and garlic powder then stir.
Flour the work surface lightly and roll out the dough into a rectangular shape. It should be really thin, less than ⅛ inch.
Cut it into 6 squares using a pizza cutter and repeat the same procedure with the other piece of dough, so as to get 12 squares.
Place a piece of prosciutto folded in half on each square. On top of prosciutto, put 2-3 spears of asparagus diagonally (see the photo), add 2 -3 tablespoons of mozzarella and sprinkle some parmesan on top.
Fold one side of the dough and brush with beaten egg, then fold the other side and press firmly.
Place them in 2 baking sheets lined with parchment paper, brush with beaten egg, sprinkle some salt and pepper and bake for 12-14 minutes, or until golden brown.
When it's done, take out of the oven and leave to cool. Serve warm.
Notes
Be careful with the quantity of salt that you are using, because prosciutto is quite salty.
In case puff pastry unfolds during baking, take it out of the oven when it's done and press gently to fold it again.
Follow the instructions given on the package about defrosting puff pastry. My advice is not to leave it at room temperature for too long, 30-45 minutes is enough, so that you can easily use it.
Can frozen asparagus be used? I wouldn't recommend frozen asparagus for this recipe, because puff pastry will become moist with all the water coming from frozen asparagus during baking.
Can Prosciutto Asparagus Puff Pastry Bundles be prepared ahead of time? I don't recommend it, it is best to serve them fresh. They can only be made a few hours earlier and kept refrigerated and then baked before serving.
How to store leftovers? Keep them in the fridge, in an airtight container, or wrap them in a plastic foliage for no longer than 2 days. Take them out of the fridge and heat in the oven before serving.
