Pumpkin Pancakes is a recipe for our favorite soft and fluffy pumpkin pancakes, that combined with maple syrup and butter are our favorite fall breakfast. They are so quick and easy to prepare and their taste is amazing.
Start by combining flour, light brown sugar, baking powder, baking soda, cinnamon, nutmeg and salt in a large dish.
Then make a hole in the middle and add milk, egg, melted butter, vanilla, pumpkin puree and whisk until smooth. Be careful not to over mix.
Meanwhile, heat a lightly oiled griddle or non stick pan over medium heat, then pour ¼ cup of batter into the pan, spreading gently so that a circle is formed.
Fry it until bubbles appear or the pancake is golden brown, then flip over and fry the other side until it´s golden brown, too. Fry each side for about 2-3 minutes.
Repeat the same with the rest of batter and serve pancakes with maple syrup, honey, butter, whipped cream or ice-cream.
