Red White and Blue Cheesecake Salad – this perfect summer salad full of fresh blueberries, strawberries and raspberries will surely sweep you off your feet. It’s quick and easy to make, refreshing and sweet at the same time. Juicy fruits combined with cheesecake filling is a winning combination. If you make this salad for the next potluck or BBQ, you’ll be surprised how soon the bowl will be empty. Red white and blue cheesecake salad can be a hit on the July 4th celebration party. It’s more of a dessert than a salad and some like it as a snack or even breakfast.
First you need to prepare berries, which means washing, cleaning and finally drying them. Strawberries should be cut into smaller pieces.
Next, prepare cheesecake filling. In a larger dish, beat cream cheese, powdered sugar and vanilla extract using an electric mixer, until it’s smooth.
Next, add heavy whipping cream and beat at high speed until the texture is smooth and creamy and it thickens.
Then, fold in berries. Place berries over the cheesecake filling and fold gently until they are evenly spread.
Cover the salad and leave it in the fridge for no longer than 3 hours.
Notes
Berries need to be fresh and not too soft, so as not to fall apart. Make sure the berries are ripe, otherwise the salad will taste sour. Berries should be dried after washing, this will prevent water from spoiling cheesecake filling.
Make sure that cream cheese has softened- keep it at room temperature for at least 30 min, possibly 1h.
Always use cooled heavy whipping cream, because it’s easier to beat it.
Add sugar to your taste- if you want a lower amount and less calories, then add sugar gradually, until the taste is right. Do the same if you like your salad sweeter.
It is best to make this salad a few hours before serving and keep it in the fridge. If you have to prepare it a day earlier, I advise you to wrap the cheesecake filling and leave it in the fridge and on the serving day just mix it with berries.
Can frozen berries be used instead? I suggest using fresh berries, because frozen ones are filled with water and it can ruin the texture of this lovely salad. If using frozen berries is your only option, then defrost it completely and then dry it well. It’s best to use a colander and leave berries in it, until the liquid is gone.
Can low fat cream cheese be used instead of regular one? Absolutely. Your Red white and blue salad will have less calories in that case.
Can a cool whip be used instead of heavy whipping cream? I prefer heavy whipping cream in this salad, although cool whip can be used instead. 8 ounces will be enough.
Can any other fruit be used? Absolutely. Bananas, blackberries, pineapples…or make your own combination of fruit.
