Super Easy Strawberry Brownies - these super moist and easy strawberry brownies are made with strawberry cake mix and a few simple ingredients, topped with a sweet frosting made from strawberry preserves.
Preheat the oven to 350°F. Spray an 8x8-inch baking pan with non-stick spray, then line it with parchment paper. Set aside.
To make the brownies:
In a large bowl, combine the strawberry cake mix, oil, eggs, salt, and vanilla extract. Stir with a spatula or mix on low speed with an electric mixer just until combined. Do not overmix! The batter will be very thick.
Spread the batter evenly into the prepared pan. Bake for 18–24 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven when done. Let cool completely at room temperature.
To make the frosting:
In a medium bowl, whisk together powdered sugar, milk, strawberry preserves, and cream cheese until smooth. Spread the frosting over the cooled brownies. Wait for the frosting to set before cutting into squares. Serve with fresh strawberries and a scoop of vanilla ice cream
