Easy Banana Cake
This Easy Banana Cake with cream cheese frosting is the best and fastest banana cake I have ever tried. Very tasty, made with few simple ingredients, quick and easy, this is the recipe I simply adore.
Ingredients
CAKE
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 cup mashed bananas, about 2-3 large ripe bananas
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 1/2 teaspoon vanilla extract
FROSTING
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cup powdered sugar
- 1 tablespoon heavy whipping cream
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 F ( 176 C). Butter and flour a 9x9 inch baking pan or spray it with cooking spray. Set aside.
TO MAKE THE CAKE:
- In a medium sized bowl, combine flour, baking powder, baking soda, cinnamon and salt. Set aside.
- In a separate larger bowl, mash the bananas until they are almost smooth using a potato masher. Add eggs, sugar, oil and vanilla and beat on medium speed until smooth.
- Add dry ingredients and mix on low speed until combined. Be careful not to overmix.
- Pour the dough into the prepared pan and spread it out. Bake for about 27-32 minutes or until a toothpick inserted into the center of the cake comes out dry.
- Leave to cool at room temperature. When the cake has cooled, make the frosting.
TO MAKE THE FROSTING:
- Beat butter and cream cheese on medium speed until smooth. Add heavy whipping cream and vanilla and beat until combined.
- Finally, add powdered sugar and beat on low speed until smooth. Spread the frosting evenly over the cooled cake.
- Cool for 3 hours or overnight.
- Decorate the cake with chopped pecans and freshly cut banana slices.
