How to Make Mango Crumb Bars:
As I already mentioned, these bars are super quick and easy to make.
Step 1: Prepare the pan and preheat the oven.
Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides to make it easier to take the dessert out later. Preheat the oven to 350°F.
Step 2: Make the mango filling.
Combine the diced mango, sugar, and cornstarch. Stir well and set aside.
Step 3: Make the crust and topping.
In a separate bowl, mix together the flour, sugar, baking powder, and salt. Add the flour mixture and cold, diced butter to a food processor. Pulse until the mixture forms small crumbs. Add the lightly beaten egg yolks and pulse again until the dough just starts to hold together but still has a crumbly texture.
You can also use a pastry cutter – the process is the same.
Step 4: Assemble the layers.

- 2 ripe fresh mango, chopped
- 1/3 cup granulated sugar
- 1/2 tablespoon cornstarch
CRUST AND TOPPING
- 1 1/2 cups all purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold, cut into cubes
- 2 large egg yolks
