- CRUMB FILLING
- 1 stick cold unsalted butter, cubed
- ½ teaspoon ground cinnamon
- 1 cup all purpose flour
- ⅛ teaspoon salt
- 1 cup light brown sugar
- BANANA CAKE
- 2⅛ cups all purpose flour
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- 3 teaspoon baking powder
- 2 ripe medium bananas
- 1 sticks unsalted butter, softened
- 2 eggs
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- ⅔ cup milk
- ⅓ cup semi sweet mini chocolate chip
- CHEESECAKE FILLING
- 8 oz full fat cream cheese, softened
- ½ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3 tablespoon all purpose flour
- GLAZE
- ½ cup powdered sugar
- ¼ teaspoon vanilla extract
I added some cinnamon for better taste and smell. I adore the smell of freshly baked Cheesecake Banana Bread Crumb Cake. Crunchy crumb topping put over soft cake is so good. How to make Cheesecake Banana Bread Crumb Cake?
- CRUMB TOPPING
- Put all the ingredients in a large bowl and cut them with a fork or pastry cutter to get crumbs. Keep refrigerated while making a cake. It should be cold.
- BANANA CAKE
- Preheat the oven to 350 F. Butter and flour 9 inch spring form pan or spray with non-stick spray. In a large dish combine flour, cinnamon, salt and baking powder. Set aside. Mash bananas. Combine mashed bananas with butter, add eggs, sugar and vanilla and whisk. Keep adding flour mixture and continue whisking. Finally add milk and whisk until well combined. Fold the mini chocolate chips into the batter. Pour ⅔ of the batter in the spring form pan and spread evenly. Save the rest for later.
- CHEESECAKE FILLING
- In a separate dish mix cream cheese with sugar until creamy. Add an egg, flour and vanilla and mix until well combined.
- Spread the cheesecake filling over the batter so that it does not touch the sides of the spring form pan. It should be at least 1 inch away. Place the remaining batter over the cheesecake filling and put crumb on the top.
- Bake for 65-75 min or until the toothpick comes out clean or with a few crumbs on it. If the crumb topping gets dark brown, cover the cake with aluminum foil.
- Take out of the oven and leave to cool in the spring form pan for 20 minutes.
- When the cake is ready to be served, make the glaze. Combine all the ingredients in a medium dish, until smooth. Drizzle over the cake.
