We all like plenty of colorful cookies for Christmas. Chocolate Covered Cheesecake Bites will perfectly fit your Christmas cookies plate. What I like most about them is their bite size and of course – taste. Classic cheesecake flavor is hidden under the chocolate.
It is a cheesecake wrapped up differently. It can be decorated according to the occasion. I´ve used green and red sprinkles, since Christmas is coming. You can sprinkle them with chopped nuts, chocolate sprinkles, candy cane crumbs, M&Ms….I leave that to you, use your imagination and be creative.
What do you need to make Chocolate Covered Cheesecake Bites?
- Graham cracker crumbs
- Unsalted butter
- Cream cheese
- Sour cream
- Eggs
- All purpose flour
- Sugar
- Vanilla
- Cinnamon
- Salt
- Semi sweet chocolate
- Oil
- Sprinkles
How to prepare Chocolate Covered Cheesecake Bites?
Preheat the oven to 350 F. Line 9 x 9 inch baking pan with parchment paper. In a medium dish combine graham cracker crumbs, melted butter, sugar and cinnamon. Press firmly on the bottom of the baking pan.
In a large dish beat, at low speed, cream cheese and sugar, until light and fluffy. Add sour cream, egg and egg white and beat until creamy. Add vanilla, flour and salt and beat until combined, not over mix. Spread the batter over the graham cracker base and bake for 35 min. Leave to cool at a room temperature and then transfer to fridge for at least 4 h or until solid.
Take out of the oven and remove the parchment paper. Cut the cheesecake into 1 inch dices. Melt chocolate, following the instructions given on the package. Add oil and stir. The mixture should be put in a small, deeper dish. Take cheesecake bites using a fork, and dip them into melted chocolate. Make sure that the bites are completely covered with chocolate.
Place them on the sheet pan lined with parchment paper and sprinkle. Put them in the fridge and let the chocolate tighten.

Ingredients
- BASE:
- 1 cup Graham cracker crumbs
- 5 tbsp Unsalted butter, melted
- 1 tbsp Sugar
- 1/4 teaspoon Ground cinnamon
- CHEESECAKE:
- 13 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 Egg + 1 Egg white
- 3 tbsp Sour cream
- 1 tsp Vanilla extract
- 1 tbsp All purpose flour
- 1/4 tsp Salt
- CHOCOLATE COATING:
- 2 1/2 cups Semi sweet chocolate chips
- 2-3 teaspoon oil
- Sprinkles - optional
Instructions
- TO MAKE GRAHAM CRACKER BASE:
- Line 9 x 9 inch baking pan with parchment paper. In a medium dish combine graham cracker crumbs, melted butter, sugar and cinnamon. Press firmly on the bottom of the baking pan, to form flat, firm layer. Set aside.
- TO MAKE THE CHEESECAKE LAYER:
- In a large dish beat, at low speed cream cheese and sugar until light and fluffy. Add sour cream, egg,egg white and vanilla and beat until creamy. Add flour and salt and beat until combined, but not over mix. Spread batter evenly over the graham cracker layer and bake for 35 min. Cool at a room temperature and then transfer to fridge for at least 4 h or until solid.
- TO MAKE THE CHOCOLATE COATING:
- Take out of the fridge and remove the parchment paper. Cut the cheesecake into 1 inch dices, using a big knife. Melt chocolate, following the instructions given on the package. Add oil and stir. The mixture should be put in a small, deeper dish. Take cheesecake bites using a fork, and dip them into melted chocolate. Make sure that the bites are completely covered with chocolate. Wait for a few seconds for the extra chocolate to drain. Place them on the sheet pan lined with parchment paper and sprinkle.
- Put them in the fridge and let the chocolate tighten.

Store in a well sealed container for up to seven days.
