This light dessert made with lots of blueberries is the perfect choice for upcoming spring days. Everyone in my family likes this amazing dessert and it’s about time I share this recipe  with you. Why do I like  Easy frozen blueberry dessert? Because I like frozen desserts, even in winter! I also love blueberries! The very color of this treat makes you feel better, not to mention its taste and I especially like the fact that it’s easy to make.

Which ingredients are necessary to make Easy Frozen Blueberry Dessert?

  • Graham cracker crumbs
  • Unsalted butter melted
  • Cream cheese
  • Heavy whipping cream
  • Sweetened condensed milk
  • Vanilla extract
  • Fresh or frozen blueberries
  • Lemon juice
  • Granulated sugar 

How to prepare Easy Frozen Blueberry Dessert? 

Step 1. Make blueberry syrup. Cook blueberries, lemon juice and sugar in a pan, at medium-high temperature. When it starts to boil, reduce the heat to medium-low and cook for about 15 minutes, stirring occasionally. Transfer it to a food processor and pulse until you get a puree, then strain through a sieve to get rid of the skin. This is optional. Let the blueberry syrup cool.

Step 2. Make graham cracker layer and topping. Combine graham cracker crumbs and melted butter and stir until crumbs absorb butter evenly. Next, spray a 9×13 inch pan with non – stick spray and spread 1/2 graham cracker mixture, pressing lightly to make the layer even. 

Step 3. Make blueberry filling. Beat heavy whipping cream until stiff peaks form. In a separate pan mix cream cheese until smooth, then add whipped cream, sweetened condensed milk and vanilla and beat some more, until it gets smooth and creamy. Next, add cooled blueberry syrup and stir well with a spatula until it’s well combined. Spread  blueberry filling over the graham cracker layer.

Step 4. Top with remaining graham cracker crumbs, wrap and leave in the freezer for at least 6 hours, possibly overnight. Take the dessert out of the freezer 10-15 minutes before serving and cut it into dices of desired size and serve. Put the remaining dessert into the freezer.

Tips and tricks:

Use room temperature cream cheese, since it’s easier to beat and there won’t be any lumps. Take it out at least one hour before using. 

Heavy whipping cream should be cold in order to get stiff peaks easily.

If you want your blueberry filling to be smooth, strain the blueberries through a sieve after cooking them and making a puree out of them. This step is optional. If you like to feel blueberries under your teeth, you don’t even have to use the food processor. 

How to store the leftovers? Cut them into dices of desired size and keep in the freezer in a well sealed container for no longer than 2 months. Don’t keep it in the fridge – it will melt.

Can I use frozen blueberries?  Yes, but cooking time will be longer, since frozen blueberries need more time to heat and they don’t release water, so they’ll need a couple minutes more to thicken.
