Blackberry Cheesecake Ice Cream
This crispy cones rich with creamy blackberry ice cream are truly amazing.
Ingredients
- 1 1/4 cup blackberries
- 1 cup heavy cream
- 2 cup whole milk
- 4 oz cream cheese
- 1 tsp vanilla extract
- 1 cup granulated sugar
- pinch of salt
Instructions
- In a large bowl add milk, heavy cream and cheese cream.. Whisk with electric mixer one minute until well combined.
- Add sugar, salt and vanilla extract and mix one minute more.
- Pour fresh blackberries and mix.
- Put in freeze for 3-4 hours.
Notes
Serve in crunchy cones and enjoy!

We tried an electric mixer and an immersion blender and both splashed liquid everywhere! I think it'd be better to cream the sugar and cream cheese first, then gradually add the liquids starting with the heavy cream. We'll try that next time.
We'll also cut the sugar in half next time because it was way too sweet! I also added lemon zest for more flavor and to cut the sweetness.
Overall, it's a promising recipe and worked fine without an ice cream maker. I'm excited to make more variations.

You need to whisk with electric mixer until well combined, because of heavy cream.
