These frozen bars made from fresh cottage cheese are the perfect balance between a healthy dessert and a light snack. Cottage cheese is high in protein, low in calories, and creamy, which makes it an ideal base for healthy desserts. When blended with a bit of honey and peanut butter, it gets a perfectly smooth texture that you can mix with all kinds of ingredients.
The base is made from graham cracker crumbs, butter and honey. The filling – made with cottage cheese, honey, peanut butter, and chocolate chips – is a healthier dessert option that you can easily enrich with your favorite ingredients. I love these bars because they’re quick to make and perfect for hot summer days, although I make them all year round since I’m a fan of frozen treats.

How to Make Cottage Cheese Frozen Bars:
This creamy and refreshing dessert is quick and super easy to make. All you need to do is let it set in the freezer for at least 4 hours – then you can enjoy the incredible flavor of this treat!
Step 1. Making the Base
Combine graham cracker crumbs, melted butter or nut butter, and honey. Spread the mixture evenly over the bottom of a 9×9-inch pan and gently press it down. Make sure to line the pan with parchment paper first – this will make it much easier to remove the dessert later.
Step 2 . Making the Filling
Place the cottage cheese, honey, and vanilla in a blender or food processor. Blend until smooth. Add the peanut butter and blend again until creamy. Fold in the chocolate chips. Spread the filling evenly over the crust and smooth out the top.
Step 3. Chilling
Freeze for at least 4 hours, or until fully set.
Step 4. Topping
Before serving, top with peanut butter, chocolate chips, and graham cracker crumbs. You can also add some fruit, if you like.
Tips and tricks:
If you want a higher-protein version, add a scoop of whey protein or collagen.
For a dairy-free version, use vegan cream cheese instead of cottage cheese.
How to Store
Store the bars in an airtight container in the freezer for up to 2 weeks.
Tip: Cover them with plastic wrap before sealing the container to prevent ice crystals from forming.
