Pumpkin, walnuts, cinnamon combined with cream cheese frosting make a winning combination. I really love this cake and  I enjoy making it.

While I am preparing all the ingredients and chopping walnuts, I am looking forward to a smell of a baked cake coming from the oven. That fine smell fills every corner of my home with some special warmth.

What do you need to prepare Pumpkin Walnut Bars with Cream Cheese Frosting?

  • ¼ cup olive oil
  • ¼ cup unsalted butter melted
  • ⅓ cup Greek yogurt
  • 1 cup pumpkin puree
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoon ground cinnamon
  • ⅓ teaspoon ground nutmeg
  • ⅓ cup chopped walnuts
  • FROSTING
  • 4 oz cream cheese
  • 3 tablespoon butter softened
  • 1 teaspoon vanilla extract
  • 1 tablespoon whipping cream
  • ⅔ cup confectioners sugar

I often make Pumpkin Walnut Bars with Cream Cheese Frosting because my family and I love the taste of it. Prepare it with lots of love and with a smile and it definitely be a success.

How to prepare Pumpkin Walnut Bars with Cream Cheese Frosting?

  1. PUMPKIN WALNUT BARS - Preheat oven to 350 degrees F. Put a parchment paper and spray an 8x8 inch pan with cooking spray. Set aside.
  2. Combine eggs, brown and white sugar, olive oil, melted butter, vanilla and Greek yogurt in a large bowl. Mix it, with electric hand mixer at a medium speed for about a minute, add pumpkin puree and mix some more. Add flour and other dry ingredients and mix until well combined. Finally, add chopped walnuts and mix it. Put the mixture in the already prepared pan and bake for 45 minutes until toothpick inserted in the center of the cake comes out clean, or with a few small crumbs. Cool completely at a room temperature.
  3. CREAM CHEESE FROSTING - Put cream cheese, softened butter, vanilla extract, whipping cream and powdered sugar in a large bowl and mix well with an electric mixer, at a lower speed for about 30 seconds, then at a medium speed for about 30 seconds more. Spread frosting evenly over pumpkin cake and sprinkle with cinnamon.

    1. Yes Pat, but you have to increase the quantity of ingredients for about half and to check periodically the baking time, until toothpick inserted in the center of the cake comes out clean.
