Key ingredients

  1. Lemon Jell-O sets it perfectly - It helps the filling set without baking, giving you a firm yet creamy cheesecake with a refreshing lemon flavor.
  2. Cream cheese creates the perfect creaminess - Softened and beaten with granulated sugar, it creates a silky-smooth filling that balances the tangy lemon flavor, just like my Easy Key Lime Cheesecake.
  3. Whipped cream keeps it light - Folding whipped cream into the filling adds an airy, fluffy texture that melts in your mouth.
  4. Graham cracker crumbs: These form the base of the crust, giving it a sweet, crunchy texture that pairs perfectly with the creamy lemon filling. If you love desserts with a graham cracker crust, try my Easy Lemon Pie for another refreshing lemon dessert.
  5. Unsalted butter: Melted butter binds the graham cracker crumbs together and helps the crust hold its shape once chilled.

How to Make The Easiest Lemon Cheesecake

Mix graham cracker crumbs with melted butter and press the mixture into a springform pan to form the cheesecake crust.

MAKE THE GRAHAM CRACKER CRUST

Combine the graham cracker crumbs with melted butter until evenly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch springform pan.

Beat softened cream cheese and sugar in a large bowl using electric mixer, until smooth.
Mix dissolved lemon Jell-O with cream cheese, sugar, lemon zest, and vanilla until smooth and creamy to make the lemon cheesecake filling.

MAKE THE FILLING

Dissolve the lemon Jell-O in hot water, stirring until completely dissolved. Let it cool slightly. In a separate bowl, beat the cream cheese and sugar until smooth and creamy, then mix in the lemon zest and vanilla. Gradually add the cooled Jell-O, mixing well until the filling is smooth and fully combined.

Folding whipped cream into the lemon cream cheese mixture.

In another bowl, whip the heavy cream to soft peaks. Gently fold it into the cream cheese mixture in a few additions, being careful not to overmix so the filling stays light and fluffy.

Spread the filling evenly over the prepared graham cracker crust and smooth the top with a spatula. Cover and refrigerate for at least 6 hours, preferably overnight, until completely set.

Before serving, decorate with whipped cream, fresh lemon slices, and a sprinkle of lemon zest for a fresh, beautiful finish.

Expert Tips

Chill before decorating. Add the whipped cream, lemon slices, and lemon zest just before serving for the freshest appearance and best presentation.

Let the Jell-O cool before adding it. Hot Jell-O can warm up the cream cheese mixture too much and affect the texture. Let it cool slightly, but don't allow it to set before mixing. If you enjoy easy gelatin desserts, try my Pineapple Pretzel Salad for another creamy, refreshing treat.

Use softened cream cheese. Let the cream cheese sit at room temperature for about 30 minutes before mixing. This makes it easier to beat until smooth and helps prevent lumps, just as in my Creamsicle Orange Cheesecake Fluff Salad.

Add the Jell-O gradually. Pour it into the cream cheese mixture a little at a time, mixing well after each addition. This helps create a smooth, evenly combined filling.

Whip the heavy cream to soft peaks. Stop when the cream holds its shape but the tips gently bend over. Fold it in gently to keep the cheesecake light and fluffy.

Give it enough time to set. Refrigerate the cheesecake for at least 6 hours, preferably overnight. Cutting it too early can result in a soft filling that doesn't hold its shape.

    1. Yes, Helene. You can use Cool Whip instead of whipping cream. Since Cool Whip is already whipped and sweetened, you can fold it directly into the cheesecake mixture. Just keep in mind that the cheesecake may be a little sweeter and have a slightly different texture than when made with freshly whipped cream.

  1. Most delicious lemon cheesecake! I always use 1.5 ones of lemon jello as it makes it more lemon tasting. I’ve been making this for years but forgot my recipe at home. We found this recipe online and it’s very similar one I have at home. Thank you!

    1. Thank you so much, Lorraine!

  3. This is so good! I made it gluten free using Kinnikinnick Graham Style Crumbs. It was a perfect ending for Easter dinner.

Lining the sides of the pan with strips of parchment paper as well as cutting a 9-inch circle of parchment for the bottom of the springform pan (as well as the tips you provided) made it so easy to flawlessly cut it for serving. Thanks for the recipe!

  4. This cheesecake is delicious. I wish my crust would have binded together a litttle better. The recipe didn’t note to add any sugar to crust mixture to help bind together . I might try that next time . Thank you

  5. I have never heard of a cheesecake with one brick (16oz) of cream cheese. Does the whipping cream compensate??
