Cinnamon Sugar Apple Muffins
Cinnamon Sugar Apple Muffins - soft muffins full of juicy apples, coated in brown sugar and cinnamon, make a perfect breakfast. It´s a right recipe at a right time - ideal for apple season.
I enjoy fall and its pleasant days, colors; fruits….I feel really inspired in the kitchen, too. I enjoy preparing desserts with apples and cinnamon, because I like the smell of it and taste, too.
That´s why, I´d like to share the recipe for Cinnamon Sugar Apple Muffins. They´re quick and easy to make, so delicious and juicy. I usually use granny smith apples for this dessert and you choose your favorite sort.
What do you need to prepare Cinnamon Sugar Apple Muffins?
- MUFFINS
- 1 ½ cup + 1 tablespoon All purpose flour
- 1 ½ teaspoon Baking powder
- Pinch of Salt
- ¼ teaspoon Ground Nutmeg
- ¼ teaspoon Ground Cinnamon
- 6 tablespoon Unsalted Butter, softened
- ½ cup Granulated sugar
- 1 Egg
- 1 teaspoon Vanilla extract
- ½ cup Milk
- 1 ½ cup diced and peeled apples
- TOPPING
- 1 ¼ teaspoon Ground Cinnamon
- ⅔ cup Brown sugar
- 8 tablespoon (1 stick) unsalted butter , melted
How to prepare Cinnamon Sugar Apple Muffins?
Preheat the oven to 350 degrees. Grease muffin pan or line with paper liners. Combine flour, baking powder, nutmeg and salt. Place apples, 1 tablespoon flour and ¼ teaspoon cinnamon in a medium bowl. Toss to coat. Beat butter and sugar until light and fluffy. Add an egg and beat some more, until combined. Mix in vanilla. Beat at a low speed while slowly adding dry ingredients and milk. Fold in apples. Scoop the batter into prepared muffin pan. Bake for 25 minutes.
To make the topping - combine cinnamon and brown sugar. Dip the muffins into the melted butter, drain, then coat into brown sugar and cinnamon mixture, so that they´re completely coated.
Notes:
They freeze really well but freeze them without cinnamon sugar topping up to 2 months. This is what preparing of Apple Muffins looks like and I really enjoy it. It really is perfect breakfast.

If I would make these in jumbo muffin tin do you know how long to cook them?

We haven't used a jumbo muffin tin. Time of baking will be longer and you should check it from time to time. It' done when the toothpick put in the centre comes out dry.
